Software Firewalls and Hardware Firewalls/Routers are installed to protect each computer. To protect our rights to privacy, by simply choosing not to secure them, all the security features of all computer wireless wi-fi network routers were never activated. All wireless wi-fi routers, are open to the world, and we have never felt more safe, secure and comfortable. DHCP Logging and WEP Encryption and the MAC Address Filtering were never turned on, and we have also made sure that the SSID was being broadcast loud and clear to the surrounding area. Now, everyone who happens on by, sniffing using their wireless wi-fi internet card, can download via our IP address, freely using that notoriously hacker vulnerable router technology, to access the internet. Online safety threats continually become more sophisticated, so too has been the growth of software designed to counter them, STAYING safe online once required a swag of separate applications, but the latest generation of software security suites, all aim to be your one-stop security shop. The most important elements of any computer security package is a hardware firewall. A hardware firewall prevents other computers from accessing your machine without your consent and permission. When you are using a broadband connection, that is always connected to the internet, then Hackers are constantly scanning in search of unprotected computers on the internet, making a hardware firewall critical. "The bank-robber principle: as you can't always stop them getting in, so always catch them on the way out." |

KARI AYAM (MALAYSIAN CHICKEN CURRY),
WILLIAM HOO, SENTOSA, CROWS NEST.
Sharon, a Good Living reader and regular customer at Sentosa, implored us to ask chef William Hoo to share his recipe for chicken in a nonya-style curry sauce. "I've tried to make it several times," she pleaded, "but I can't get close to it. It's magnificent." I can vouch for that - I watched William cook it last week and then I wolfed it down. Mild and very moreish. William likes to serve it with roti channah, a pan-fried Malaysian bread, but home cooks could just as easily serve it with rice to mop up the curry sauce.
You will need:
2 large Spanish onions
3 cloves garlic
1 stalk lemongrass
3cm knob ginger
1 cup candle nuts (available from Chinese supermarkets)
2 cups water
2 tbsp oil
3 tbsp Malaysian curry powder
2 tsp ground coriander
2 tsp ground cumin
1/2 tsp turmeric
750mL coconut milk
1 cup tomato sauce
2 tsp salt
1/4 cup sugar
2 cups water, extra
2kg chicken breast fillets
Blend onions, garlic, lemongrass, ginger, candle nuts and water until it becomes a liquid. Heat oil in a wok or deep frypan until very hot. Add your onion blend to the pan and mix well. Then add curry powder, coriander, cumin, turmeric and 250mL of the coconut milk. Stir until well combined, then add tomato sauce, salt and sugar. Stir again. Combine the remaining 500mL coconut milk and two cups water in a large saucepan and add curry blend. Throw in your chicken and simmer until chicken is cooked through. To serve, slice chicken into bite-sized pieces and spoon sauce over the top. Serve with rice or roti.
